Konishi Brewery’s origin dates to 1550 in the Itami Plateau located in the southeastern part of the Hyogo Prefecture in Western Japan. The Itami region is the cradle of clear and limpid sake we know today. Konishi Brewery played a pivotal role in the history of clear sake development.

This Hiyashibori Junmai Ginjo is refreshing, silky and  soothing, expressing fine aromas of rice and ripe papaya. We recommend to enjoy it chill at first in a large wine glass while eating your meal. The change of temperature will bring different flavours and spikes of umami, boosting the taste of your dishes.

To this day, Konishi is one of the oldest surviving sake brewery; proud of a sake crafting tradition of more than 450 years and honoured to bring to legacy to Europe for you to discover.
