Description
Tajima Shuzo is a traditional brewery dating back to the 1840s. Its representative label, ”Fukuchitose”, is brewed using a technique called ”yamahai jikomi” in which steamed rice and ”koji” are ground until they become porridge-like. Generally, ”yamahai jikomi” is known for creating a strongly acid, heavy flavor that is preferred by ”sake” enthusiasts, but ”Fukuchitose” is characterized by its elegant scent and the fullness of its flavor.
Nevertheless, the young Toji (Master Brewer) decided to specially craft a sake to be enjoyed à la “On the Rocks”. This very accessible, easy to drink sake is produced using cherry-blossom yeast, known as sakura in Japanese. Hence the name Sakura Rock.
Just serve on ice in your most fancy spirits glass to enjoy this fragrant aromas and pleasant taste. If you feel 19% is too much of alcohol, take your time, let the ice melt.
