The use of Ogawa yeast during production gives this sake a fresh fruity aroma and a delicate umami. This is an unpasteurized (Nama), undiluted (Genshu) Sake with a slight sweetness and golden color.

Shimazaki brewery was established in 1849. Through its long history, one of the owners, who was extremely passionate by Sumo wrestling, decided to name their products Rikishi, which literally means Sumo Wrestler in Japanese.
The Brewery is known for its bottle cellar located in caves that were originally built to produce combat vehicles during the second world war. Although no vehicle was ever produced in the cave, the sake bottles are now safely preserved in them.
